Walk into an extraordinary garden where coffee species and varieties from across the world grow side by side. This is far more than a plantation. It is a living library dedicated to preserving the future of coffee.
Walking alongside Gonzalo, discover how altitude, climate, genetics and geography shape every tree, and why protecting coffee diversity has never been more important.

Every remarkable coffee begins with a single seed. Working alongside Gonzalo, prepare a coffee bean for planting, learning how future generations of coffee begin their journey. Your bean is carefully planted within the nursery, where it will be nurtured before becoming part of the collection itself.
Its variety and planting date are recorded, creating a lasting connection to the garden and a living contribution to the future of coffee.
10:30am
Return from the garden to gather for a beautifully prepared private lunch surrounded by the garden. The menu takes inspiration from coffee in unexpected ways - perhaps coffee blossom, cascara, coffee cherry, carefully selected beans or flavours that naturally complement different coffees woven subtly through the meal.
Over lunch, conversation continues with Gonzalo: the stories behind the collection, the plants they have searched for, the surprises they’ve encountered and what decades spent growing coffee have taught them.

Conclude the day with a private comparative tasting drawn from Gonzalo's extraordinary collection.
Explore exceptional coffees from different species and rare varieties, tasted side by side. Rather than being told what you should taste, Gonzalo encourages you to trust your own palate, discovering remarkable differences in sweetness, texture, aroma and complexity.
